Is there a tournament mode of just regular chess play? All I keep getting is weird speed chess matches, and for some reason one match had both horses on one side and both bishops on the other.

That would have been chess 960 where the pieces are randomly placed on the first rank. These tournaments should say (960) after the time control. If it doesn't say that it is regular chess. Longest time control in live tournaments is 15 minutes plus increment I think. Again, the time control is stated next to the tournament when you select to join.
