Unrated player throughout game then rating shows up after

I am just wondering why I set a particular rating guideline for my next opponent and they show up unrated and then I come to find out this player is higher than expected. Actually I played well against these stronger players but its not what I initially set up for my game so why are they allowed to accept my challenge? This is in regards to creating a new online chess game, thanks.

Their rating showed up because they have a game against you to base their rating off...

I am not sure I clearly understand. For example, I am currently playing someone and it says that they are unrated, but I now discovered that if I click on their profile they are playing other games and their rating is listed, which is fortunately in my range. Maybe since the time they responded, they where previously a lower rate and therefore were able to respond to my game request?? Just dont know why a current rating is stated throughout the our game.

When someone creates an account he is "unrated"(what else could he be?).If he is a good  player he will have no difficulty winning his first games so after , let's say, a week he might  already have a rating over 1700(even higher if he plays a lot of games).

When someone accepts your challenge , if he is unrated , abort the game if you don't want to play against someone that might prove much stronger.Or check how many games he has finished.If they are too few might mean that his rating , if he has one, does not depict his actual strength.Players that have played over 50 games usually have a rating that depicts their actual strength.
