Coffee-shop is mostly a style of playing : sharp positions, moves that may not be objectively best, but complicate the position and so on.

Bobby Fischer once referred to Lasker as a 'Coffee shop player'. To me that's like referring to CCR as a 'bar band'. Judging from how long Lasker was world champion he must have been the best 'coffee shop' player of all time.
It's funny, when someone posted that definition of "coffeehouse player," and started talking about the best GM "coffeehouse" player of all time... I thought of Lasker. 
Eh... Fischer was really a park player anyway. One of those smelly old guys in the park, likely with mild schizophrenia, playing to get money for the liquor store. Like Alekhine.
Interestingly, there are exactly seven derogatory categories that every chess player may be classified under. I'm a "hedgehog".
