Take a break and don't continue to play games when you are consistently losing. Make sure you are mentally fresh. Keep in mind, your lower rated opponents may be on the rebound from their own losing streaks and may be much better than their ratings. One blunder is all it takes no matter what your rating. Take your time and make sure you look at the threats your opponent has in store for you.
watching videos and playing puzzles and now I lose to a bunch of under 1000 players in 700 and 800s.

when you put in some work it feels like a rocky movie training montage and after a few weeks you are ready to fight
“no way my opponent is training hard; i will mop the floor with him...”
and then, because of tactics training, you begin hurling your pieces and all of a sudden you are making mistakes and getting in trouble
it takes time for new info to properly become a part of your play and you are bound to lose games as you process everything
and when you feel entitled you ignore opponents threats and make catastrophic blunders
just chill for a bit and realize it takes time and take games slowly- dont rush to pwn with your newly acquired leetness

No offence but you don't know openings well and even if you did that won't be the reason why you lose games at that rating.
Playing 2.Qh5 and doing all sorts of weird things. You aren't playing openings. No solid theory or principles.
Not sure why people say "damn I should have studied this opening" when they blunder on move 2-3 or something. If you make an obvious blunder or hang a pawn/piece that's not an opening.
In your recent loss to an 800 rated player you moved your bishop 4 times. This isn't an opening. Just drop it back to safety where it can't be kicked around.

I was better when I didn’t even know openings. Watching well known you tube players and in a free fall. Depression has taken over. I think I’m done.
Dont worry about openings untill you are 2000 in rapid

Theories in the end are just theories.
Yea, like the theory of gravity. I choose to fly whenever I want to.
You are playing chess at a 1 minute time limit? Blessings be upon you! Maybe you should try longer time limits?
At this rating it is not about openings even if you will know them well. Look for tactical patterns, learn to calculate. I think 1200 can have good attacking skills but miss defensive tactics. Stick to one opening for white and black and learn it properly. I can recommend London or Queens gambit for white and kings indian for black and if e4 is played, I play pirc or sicilian, but sicilian is theoritical a lot
