What I notice as a rank beginner

I've lost a LOT of games but almost never run short of time. Some people seem to think the goal is not checkmate but rather preserving time. I finished a game with about 11 min left and my opponent lost but still had 18minutes left in a 15/10 game. I'm sure that if he'd slowed down he'd have beaten me handily. Seems like, for some, finishing a game with more than 10 min is essential. I am not trying to be snarky, but truly don't understand the stratgy
