The Scotch Opening as white.
What is the easiest to learn opening, that keeps it balanced and or winning for both colors?

Caro Kan is a very good option, just watch some instructional videos and ideas. Very solid and low on tactics.

london, italian, scotch, king's indian
anti london is annoying, i am learning london in chessable.
I tend to struggle playing black as I know more lines and variations for white (me problem) So I just want something that works, I've been using a king's fianchetto to secure the opening and some rook snipes at the other end. What are some other openings that stockfish approves of that keeps the game low on tactics and more of a balanced game throughout (must be easy and NOT GRUNFELD I SWEAR THAT IS NOT EASY)
