I don't think brilliancy really matters. Its according to a computer, which only has one playstyle, which might be innaccurate etc.
I also suck and I made a position so confusing and hectic by using my own lack of skill that I managed to earn my first brilliancy: 13: Qh5+ in this game

but hold on, is stockfish updated every day or so? If that's so, it should learn from those brilliancies and consider them as best move in the next version.

I think a Brilliancy depends on the Depth of the engine you are using. Run game analysis on the lowest depth setting, and play a great move, I mean like the best move you can find, and it has to be somewhat tactical. You'll get a brilliancy. A brilliancy is mainly a move that it did not consider winning a few depth plys below, but it can see it is the best now. This mainly includes tactics that are 2300+ according to the Chess.com rating scale, and you are running Game Analysis at the lowest Depth. Each higher Depth setting will increase the skill required to get a brilliancy
