What should I play against 1. e4?

I have 1050 elo in rapid, I like to develop, but Caro-Kann is to solid for me. Sicilian is not good for me, because white has some very good defenses against it. I like playing 1. …e5, but I don't want to play Italian with black. I don't like Petrov Defense. The openings I like with white: King's gambit, Italian opening, English opening. Should I try the French?

No offense but most probably openings are not the problem. You can try the French, but first improve your chess vision, tactics and logic.

You do not win or lose because of the opening, but because of tactical errors.
