black:e5 kings pawn, if your looking for something easy to learn, but i prefer the sicilian nijdorf put it's very positional,

white: e4

...c5, when nc3 and play on, it's a closed sicilian line and is very easy to play

...e5 2.nf3 nc6 bc4, i used to play this and it has served me well, i know use the scotch gambit[1)e4 e5 2)nf3 nf6 3) d4]

...d4 2.exd4 qxd4 3 nc3, play on

...e6 or c6 2.d4 d5 3.exd4 c/exd4 4.c4(i still use this)

Anything that allows you to get into the middlegame safely.  gain equal space, develop your pieces, castle, control the center, and try and keep your pawn structure nice.

I'll join the herd and say any opening that follows opening principles well-quick development and king safety with central control as the focus. Usually openings that begin with a king or queen pawn move (1.d4 1.e4 as white or 1.e5 1.d5 as black).

I like the Santa(e4 e5 b3)* and the Queens Gambit for White, for Black I like Dutch against d4 and e5 against e4.
