id love to play one against someone really good, even if I have to pay a little
Where do you live? Do you ever play in large over the board tournaments?

Im only 700 ranked here, ive never played in a tourny over the board, id like to soon if I can find something 1000 rated around. I live in NY. But I have seen that there are some online simuls, I dont know where to look
There are guys here who offer simuls pretty often. Keep your eyes peeled. Here was a recent one:

The live experience is better, however. Getting to meet a world class player you have read about is a thrill and they are usually something of a showman, so you have a good experience.
There used to be a lot of simuls in NY City when I lived there in the 80's. It was a great experience. I got the chance to play Petrosian, Tal, Seirawan and Bisguier. (I lost all the games.) I still remember the flash in Seirawan's eyes and his slight smile when I had made the losing move. (He was nice about it and didn't say anything mean.)
But you will have to start visiting tournaments to get used to playing live and to find out where and when simuls may be offered. You should start by playing in a regular one day tournament. Look at the US Chess Federation site (uschess.org) to learn about upcoming tournaments.
