Defense? Or opening? A "Defense" is for Black, not for White.

If there was a "best" opening, nobody would play anything else.

There are many good defenses for black.
Against 1 e4: Ruy Lopez, Petrov, Sicilian, French
Against 1 d4: Queen's Gambit Declined, Queen's Gambit Accepted, Slav Defense, Nimzovich Indian Defense, Grünfeld Indian Defense
