I like fianchetto-ing my bishop(s) or playing c4 and f4 and putting my knight(s) behind it. It's a nice change up from boring center pawn openings.

It was you that clearly stated you're a 1.e4 player, which then means every game you play start's with that move 1.e4. What you're opponent responds with is totally different. I bet you hate 1.g6.
