Why is it when I get matched up with a much lower player than me

Accuracy isn’t all-telling, especially without considering the rating of the opponent. Estimated rating is a better indicator.

it's super common on this site for higher rated players to drop several hundred points so they can whip lower rated players. it's worth checking a player's peak rating before the game starts to get a sense of what you're up against.

the accuracy of a game someone plays doesn't really mean anything if all the good moves are handed to them. You made a couple of blunders and because your opponent capitalized on punishing your moves, they were given a higher performance. It's not called sandbagging if you are the person who is making your opponent's life easier.

However, I will give it to you: your opponent seems to be performing much better now, and it has only been a month. It doesn't exactly mean that your opponent was sandbagging, as they did not have any suspiciously large peaks prior to your game. Just keep playing and move on. This case is very normal, imo
