Because most people don't play that way.
You can play a series of such best of three matches against your friends.
Don't try to impose it on the rest of us.
Same reason why people don't do rematch, except with even less of a reason to play

Monday I think it was. I played a 10 minute game where I lost my Queen to a mouse slip and lost. Dutch opponent offered a rematch which I won then we played a third game. I won the best of three. Very pleasant but it was spontaneous.
I can't always play three games in a row. Time issues before work in a morning for example.
