Most people here will just tell you to play humans then not answer your question. Obviously playing humans is far better than computers, however sometimes it's hard to find a long game online or you maybe in a situation where there is no internet available so i understand your question.
you have two options available, HIARCS and Shredder are the engines that best mimic human play as they tend to play more positionally. they also don't blunder a piece then play like magnus Carlsen.

I play once a week a long game in my chess club. Playing against chessprograms is very different. I would be a great idea to practice against computers ( mimic humans play) at home. The best chess program for this is Chessmaster. You can play against computer personalities like Morphy, Tal, Fisher or lower rated personalities. They all have their own style. So you can practice against positional, tactical players... It's fun. Are there other programs like this? Who knows?
