How can I get pgn files of my games without the clock data included?

Switch back to V2. Those pgns's don't have the time data.

Or, if you have PGNs already downloaded and you want to remove the clock times, and if you're handy with command-line utilities, you can use the trim.exe utility in Norm Pollock's 40H-PGN Utility Suite:
