When I usually play chess.com on my phone I usually want to play different variants not just chess960 or bullet, but it doesn’t seem like it lets me play 4 player chess on mobile

Other than 960, variants are only available on the website,.

Use the website. You can find the variant under Play by choosing Custom and changing Standard to the variant or on the Play > 4 Player & Variants section
