A few times when bullet became unplayable on C.C I played a few games on lichess. Was able to play 1+0 games without issue there, even though I believe their servers are in Europe which is much further from NZ.

Perhaps chess.com need to invest more in networking infrastructure. From my time working in big tech I know these companies invest a huge amount in their networking infrastructure.

My understanding is that Lichess basically allows pretty much all lag, so even if you're experiencing it there, it doesn't impact the game flow.

The site is working on a more distributed server network for games and over 50% of games are currently being played on that. As more games get migrated to that system, most members should notice an improvement.

That said, there are a lot of variables that can impact connections and most of those are outside the site's control. Anything from the client device and processes running on it, other traffic on your internal network, your router, your ISP, the many devices the traffic flows through, down to the site's datacenter and network. The site only controls the later part, client code, and how to handle lag and disconnect/reconnect attempts.
