Opponent gained a load of points in one game
That was his first rapid game in over a month, so his rating deviation (RD) went up. This means that his rating will change by a greater amount after each game until he has played more rapid games.

I'm not entirely sure though. I get that the other person didn't play for a long time and still won, so they've actually improved. But what if they'd lost? Would they have a drastic decrease in their rating as well, especially because I'm a lower rated player?

Yes, they would have had a larger rating decrease as well for the same reason.
I just want to know how this works.
In one of the rapid games I just finished (15|10) I was rated 456 while my opponent was rated 515. When I lost to him I lost 7 points and became 449 while he gained 45 points and became 560!
Why such a large difference? To gain the same 45 points, I'll have to play between 5 and 7 games.
