Say I am pinning my opponents night to his king and he checks me with his rook on a square protected by the knight, why am I not allowed to take with my king. I know that I am not allowed to put myself in a position of check but surely it’s not actually a check as the knight cannot actually attack my king since it’s pinned. (Knight not night)

Here's a position similar to what you are asking. Why can't the White king take the black knight since its defending rook is pinned?

Just ask yourself this simple question: Who would be able to capture the opponent's king first? If White could take the Black knight, then Black would take the White king before White could take the Black king.
