select 10 min in time selection menu and press START GAME button. and play the game, now later default is set to 10 min.

I don't think you can set a default time control in any settings, but rather the interface gives as "default" the time control you last played on (like shukh said).

How do I change my default settings to 10 mins instead of 5/2? I checked the help pages and they were suprisingly unhelpful - at least if they were in there i couldn't find it.
