Well, in a 1 min game, each player gets 1 minute for the whole game each, and if your time runs out you lose. Same basic thing with 3 min and 10 min. For a 1|1 game, each player gets 1 minute for the whole game, except after you complete your move, you get a bonus second added on. This lowers the rate of flagging (beating your opponent on time). The 1 second increment (that's what time options like 1|1 and 3|2 are called) is represented by the number after the "|", and it's in seconds. In daily time, you get one or more days to complete your move, so you just check back regularly. Max time per move in Daily Chess is how long you get per move. So, time in Live Chess is measured by time per side for the whole game, while in Daily, it's the time per move. The most common daily time controls are 1 day, 3 days, and 7 days per move.
As for finding someone with a similar skill, you just have to play games until you find out your rating. The more games you play, the more accurate your rating will be. To play a game against someone of similar rating, click Play on the left hand sidebar, then click the Play Online button. I suggest you start with either 10 minute games or 5|5 games, as you're just starting off. As you get better and more comfortable, you can play 3 minute games and such. After you select the time control, click the green Play button right underneath, and it will pair you up automatically with someone. Good luck!

Is there anywhere on the site that explains the options? For instance, 1 min, 3 min, 10 min, 1/1, 2/1, 3/2, daily time, max time per move?
What does that all mean? How do I find someone of similar skill? I don't even know my skill for that matter.
