Choosing the right Swiss variant (over the board tournament)

Hi there,
In search of some advice. I'm organising a small over the board unofficial tournament this Sunday. 16 players, 10+5, 8 rounds. I'm using the program Sevilla for pairing and results. So i have two questions considering that 6 people have an official rating, and 10 don't.
1. Should i include the ratings in the user profiles?
2. What is the best pairing system and (Swiss)variant to choose in this case? I now have Pairing system 'Swiss' (with FIDE mode on), and 'Dutch (Rating)' as Swiss variant (see image below), but i'm not sure if that makes sense.
