Maybe because you play higher rated opponents, or you don't blunder against lower rated opponents, or maybe you're just unlucky, or you resign when you are in a losing position. I normally resign in a losing position too, but I saw some mating chances, that's why I continued playing.
a nicer veriation is 1.Bg8+ kxg8 2.h7+ kxg7 3.h8=Q#
I was terribly losing a live chess game, but I finally won with this mate in 3. I hope you like it. It's not a very hard puzzle.
