hey - enjoying the puzzles. Question. 

Why no put black Queen on b7, preventing knight from playing e7+ and removing the threat of the fork. Then, black is threatening knight to c2 and is attacking the knight on d5 as well. White will probably play queen to e4 to protect both and then black can take the knight on e5 with pawn.

You are right, Qb7 is also good, though black has no fear to the fork on e7, as the simple Qa7 makes sure that one of white knights is falling
