 Nxh6 doesn't threaten mate on the next move (Nf6 does), so black isn't forced to capture the knight.

It's true. After 2. Rh3 white's pieces are just so menacing black is as good as nothin. 3. Nf7 - a discovered double check is threatened.

As a general rule, it's always best to go for the most forcing line. But in this case, 1. Nxh6 leaves black with no choices as well.

Yes.  I stand corrected.  Actually, I had only considered the same kind of continuation as Nf6 and saw that taking the knight wasn't forced.  Rh3 is a nice move.
