On Switch I have so many games but I don't play them! I had a lot of fun with Pokémon BDSP, Breath Of The Wild, Mario Odyssey and Mario Kart. If you haven´t already I suggest checking those out.

To me it seems you like games that keep you at your toes, so I'd recommend either Splatoon 3 or Super Smash Bros Ultimate. Don't reccomend an amibbo, but if you're going to get one get whatever character you like the most. Some of my favorites are Kirby and Squirtle.
pokemon scarlet fits well with a lot of what you said
Buy what you think you might like, not what people want you to play.

You stick it to the little stick thing on the joy-con that you use to move in your games. Some can only be used in certain games, though. There may also be an option in the games settings to turn Amiibo use on/off.
