Unrated games doesn't count towards any part of your rating, including your "best win".
That is why it didn't show up.

My statistics show my best win was 1475. Yesterday I beat a 1607 player.
My statistics didn't change. It still shows 1475. My win was an unrated game.
Is that why it didn't change...Unrated games don't count on best win ?
