Many people play better in OTB tournaments than on here because A. they try harder and care more B. they can spend more time, people that have a lot of correspondence games tend to not spend much time on each, and C. for some people playing on an actual board with actual pieces is better then playing on a flat, vertical, 2-dimentional computer screen. This isn't true for all people, but I think it is for a great many.

I seem to be the opposite. I see things better on 2D than 3D usually, and I am far more relaxed and usually think more clearly playing online than OTB tournaments (trying to correct that!). How serious one plays however would probably be a factor for many, and most likely all from time to time though.
That said, I don't think there is anything that can replace the feeling of playing in a big tournament hall among hundreds of other chess players. Online just doesn't compare to that so even if I might at least temporarily play worse over the board I would always pick over the board to online play.
