Pairing according to elo in tournaments

Hi everyone. I’m wondering why there is no equality when participating in daily tournaments. My point is,that in majority of time,winners with most points are the ones with elo below 1000 and totally amateur players. So lower rated player are playing against similar rated players while higher rated players against higher rated opponents on the SAME tournament. Whats up with that,why is there no ranking pairing no matter the rating?I apologise if that was already discussed.

The way you describe them, it sounds to me more like you're referring to club matches, where the strongest members face each other, until the pairings are completed with the lowest-ranked players.

Because it sounds strange to me that it's in daily tournaments, where the highest-ranked players are paired with the lowest-ranked players practically every time, every round in his KO or multiple players group.

Or maybe you aren't referring to correspondence chess... on that phrase "daily tournaments."
