Why does black often check with Bb4 or pin the knight in queen pawn openings, and then trades the bishop for white's knight or bishop?

Alot of the time in these openings black ends up with pawns on e6 and d5, making the LSB a "bad bishop".  For a start you generally want to get the bishop "outside" the pawn chain if possible to increase its activity.  Trading fot the knight on f3 isn't the most ambitious option but it is solid and makes positional sense in most cases imo.
