Why aren't chess games "open book"?

So you don't have to remember so much opening theory by heart? The good players will still win, they just won't be caught by holes in their memory or not wanting to spent countless hours memorizing opening theory for a board game.

You are free to consult books and databases when playing correspondence chess.

You can play 960 chess but there is a beauty in classical chess and the various openings that is appealing even though someone may have memorized more lines than you.
