Rating Accuracy

Do you ever feel like your rating isn't accurate? Do you ever play a game where a low ranking player whoops you? Or the opposite, where a high ranking player is really easy to beat? Sometimes I feel like the Chess.com ratings are off. It seems like if you play more then your rating will be lower, but if you play less it will be higher. How do you compensate for a player that is really good, but plays everyday, vs a mid player that rarely plays and has a higher rating, even though the first one is better? I believe people's OTB rating (over the board rating) is more accurate, and that sometimes a player's elo could be off by a margin of about 0-100 higher or lower.
