What to do in King's Indian when they take on e5

I started playing KID again recently, and to be fair I didn't study it at all, I just play the setup, and try as hard as I can to get that pure king's Indian with the locked center and king's side attack, and I do everything I can to get that, lose tempo, lose some material, not take exd4 in certain moments even if I know it is objectively good, and all of that just because I just don't understand how to play those positions and structures, and more importantly why would you want to play them

For example this game (btw, I know it is not KID, but my point is in any structure like that I'm trying to get something like that)

And this is a game where I was lucky and my opponent just didn't play well, and I got away with it, but I want to start playing it OTB (I'm 1700 ECF right now but I only had like 15 games, so I think my real rating is a bit higher, this is just to say that my opponents will probably be able to punish me if I will play like that) and I don't want to play it and just pray my opponent will lock the center

I was trying to find an example of the game where it went thous but I think you can imagine it wasn't good

So I suppose my question is, what books, courses, or anything else I could use to learn how to play structures with 7. dxe5 (in classical variation, and any similar ones), or maybe what variations should I play to get locked center consistently, or maybe alternative to e5 push idk, I just want to not rely only on them locking the center

And I'm not even gonna start on how lost I am when the cast queen's side or something, this deserves a whole separate post
