The checkmate line was chosen for the puzzle to showcase one of the main ideas of the puzzle (the back-rank mate).

Puzzles allow for sub-optimal moves, and it doesn't matter which line is chosen because White is lost both ways. And, if the optimal line was chosen, there would be many complaints about "Why did the opponent just give up the knight like that?" You can't please everyone.
