A decent way is the closed sicillian, just develop both knights and play Bb5 if black puts a knight on c6, otherwise if black delays it play g3 and Bg2, with plans to expand on the kingside. Other than that, there's a bunch of antisicillians that can be okay as long as you're not at grandmaster level, like a3 with the plan of b4.
I won a game from a +2000 player in one of the tournaments (against Acropolis). The opponent made an absurd sacrifice to me, I suppose out of arrogance or just for fun. It wasn't enough for him.
