Here is my favorite anti Sicilian opening. Awesome in blitz, as almost no one plays it, the Staunton-Cochrane variation.
Almost every game gets to this position, with occasional changes in the move order. From there white can then play a3, Rb1, prepping the b4 pawn push, or they can do f4 right off the bat.
From either of these positions it gets to be a pretty good fight, that is incredibly even on all sides. games played with this usually become battles for the a and b, or e and f files.
I apologize if I have not gone incredibly deep into any lines, but the games are usually played very evenly, (though there are often mistakes made by the other player), and almost always get to the first position without any problems.
