I recently studied the Caro-kann course on chessly.com and it has the solid lines to play against the fantasy variation along with pretty much all variations. You can get a free trial on it and have a look at the lines if it suites you.

My coaching philosophy is mostly similar to that of the steps methods and has a small flavor of the approach of Can Kabadayi (he is a cognitive scientist, and employs the techniques in his teaching).
