Wait I thought is was like there are the Valar which are like gods than there are their servants. And Sauron was simply a servant. He didn't actually create anything.

Actually, the Valar are the major gods, and then the Maiar were minor gods, they included Gandalf, Saruman, Sauron, and many others.

In theory, the Maiar could have had the capability of becoming Valar, because they were the same type of being, only differing in power.

Potentially, yes, but only an evil Maiar like Sauron would have tried, and (as Sauron found out) it would have been extremely difficult to pull off.

Actually, Sauron had all nine of the Rings of Men, through which he controlled the Ringwraiths, they did not carry their own rings.
Furthermore, Sauron is on his own far more powerful that Galadriel, even with her ring.

If anyone in Middle-Earth (besides the five Istari, who had special rules given to them by the Valar) had been strong enough to actually stand up to Sauron, The Lord of the Rings would never have happened.

Though Sauron is most likely more powerful but, we never see (at least in the 3 lord of the rings books) his power, we only slightly hear about it.

We actually do see it. Every one of his servants was imbued with a portion of his power, look at Denethor and Saruman's corruption, look at Grond.
The Ringwraiths were themselves mighty, his strength is shown in his ability to control them. Orcs alone are nothing, everything the forces of evil do in The Lord of the Rings is evidence of Sauron's power.
