Use the backgammon doubling cube. This would prevent trying to win by waiting out the other player. Also, you wouldn't have to have such a tight time restraint. Losing players would be motivated to quit rather than to hope for a miracle.
Another variant: If a better player misses a two move check mate (or three or x move check mate) then he loses.
Another variant: When someone gets a piece ahead, they have x moves to win. This would keep players hoping for victories.
