I’m looking for a single white knight piece as a symbolic gift. I’d prefer an elaborate one like you might find in an $800+ chess set. Any ideas?

You could try Chess House to look through their single replacement pieces or House of Staunton to check out their large knight.

Most of the time , You can order a set of  knights ' thats 4 ' , Down side half the price of a full set .   So not cheap . TCE  /  SC / CB + shipping etc .

FYI: Chesshouse has Sinquefield repro Knights for $14.50 (black and white). And that Savano Knight (white only) for $28 looks REALLY nice. I might buy that for myself!
