Fritz is the most popular with a lot of features that would appeal to beginners.  You can set a Coach to watch you as you play and give hints or advice, and there are a wide range of training modes.  It can analyze your finished games for you.

Chessbase is more used for developing an opening repertoire or searching through archives for games of a particular type, eg. opening or endgame, or games by specific players.  It is used more by strong players when they annotate their games, and also has features for web-publishing or viewing multimedia teaching materials such as Chessbase magazine.

Aquarium can be used to play games against or annotate, but it is seems to be geared especially to engine testers and automated analysis.

Chess Assistant is very similar to Chessbase, mostly used for searching and annotating, although again you can play games against it.

Deep Rybka will be stronger than Rybka if you have dual-core or quadcore computer, because it will use all of the different cpus at the same time.
