I'm trying to decide on either Understanding Chess Openings by Sam Collins or FCO Chess Openings by Van Der Starren....Any IMO's on these 2 titles? It's for my 24 year old son, he's a beginner and has no grounding on openings. I want to keep things simple in that area and do not want to smother him in theory.... and those two kept coming up online.

Two books. John Watson’s Mastering the Chess Openings volumes 1 and 2. One for white. One for black.

Yeah I saw those too; I like them particularly. Even if they are a 4 volume tome. However, I was only looking for one hardcopy with all of the openings, as I already own MCO-15(But it's a monster.) my boy could use something simple like the two I mentioned earlier, I just wanted to know which one would be better, either Sam Collins or Van Der Starren

I bought FCO Chess Openings for good measure; the reviews look good, and I've never read it personally, but. It'll make do, keep things simple for the boy. Thanks again!
