Afraid I don't know anything about your second question, but the first is easy. Simply turn on "Infinite Analysis" - should available on the ribbon under the "Home" tab.
Two Fritz 13 Questions
Found it! Thanks very much - that IS easy, and seems to do exactly what I want it to do. I just didn't know how to look it up in the help files.

Old man here. Fritze 13 question. Anyone know how to turn off the ticking clock that starts when my turn begins while playing against the computer?
I've tried "Board" tab, board sounds and clocks. I don't want to turn off board sounds just the clock that starts ticking when it's my move playing against fritz
I've also tried the drop down menu under "file" tab, "options" and looking in multimedia settings.
I need the noise to stop! An old man could go (more) crazy!

The ticking clock sound is a "board sound" so if board sounds are enabled, you will hear the ticking, along with the other sounds.
I suggest you rename the relevant sound files. On my system, they are found here: C:\Program Files (x86)\ChessBase\Sounds\Board
You should find a ticking sound file (maybe 2) in that folder. Just rename the file(s). For example, tick.mp3 to tick.mp3.off, or something like that. If you don't display file exenstions on your setup, change the file(s) "tick" to "tick off" or anything you please.
Edit: Of course you could simply delete the file or files, and that will work, too. But then you won't be able to turn the ticking back on without replacing those files.

Second, I want to create a database (actually several databases, by theme) of chess puzzles/problems. I need to create the position, but with some text (e.g. 'white to mate in 3', or 'black's last move was xxx', or 'what is the minimum number of moves to checkmate'), and I want use that position against a chess engine playing the opposite color.
I had a similar question, something like a Tactics trainer on chess.com
It looks bit complicated on Fritz but there is a software (free) called Lucas Chess, where you can do this and use it with stockfish.
https://www-lucaschess.rhcloud.com/index.html
I also found an article on chessbase site on how you can use Fritz for tactics training.
http://en.chessbase.com/post/endle-tactics-positions-with-fritz-13
My plan was to use one specific book, load the pgn into the software and practice the tactics positions a number of times.
Don't think any other softwares like shredder/chessking/ hiarcs offer this option either.
Also is there any book which helps with how one can make optimum use of these softwares for chess improvement - tactics training/endgames/database management.
thanks in advance.
I'm a chess novice, and fairly new to electronic chess and chess software. I just got Fritz 13, and I have two questions which I didn't see covered in the help files, or on a couple of forums I've checked. Both are related to how I want to use Fritz for my own training and improvement:
First, I want Fritz (or other installed UCI engine) to do its analysis, but NOT play its move (and in this case the clock is really irrelevant). Especially with a given position, I want Fritz to do the analysis, show the move(s) it thinks are best, then allow me to move the piece (or use another line from its analysis after I've studied the analysis) when I'm ready to proceed. How do I do that in Fritz? Maybe using the Analysis board, but even that doesn't seem to want to work the way I want it to.
I've searched for information on doing this in my Fritz, but it apparently doesn't allow what I want to do, or at least doesn't document it clearly. I've also searched various chess forums, with no result. Can I do this in Fritz? If not, is there a UCI interface (e.g. Arena) that allows me to do that easily?
Thanks in advance...
