Ok to be fair, my position was completely winning out of the opening was up like 3 pawns, then blundered an exchange and a pawn for no reason, and then won when my opponent again blundered

Who cares what grandmasters play. The strongest chess player of all time is Deep Blue and it exclusively played the Alapin against the Sicilian. That should be all the proof you need

Deep blue program was extremely ancient and inefficient software. Deep blue reach max search depth max 18 -22 only. And rated 2900. ( Marginally beat 2800 rated Kasparov).
Current Stockfish is extremely powerful and can reach depth beyond 30+ within a few seconds .
Current Stockfish on common smartphone is 3400+ and desktop is 3500+.
Stockfish on current PC will kill Deepblue by 95-5 in 100 games match.
