Best equalizing defense against e4

Right but if you play the Caro Kann from Black side you would need to be prepared for this.

White has simply wasted a move with Ne5, Black can continue development with bf5 and be equal, maybe even better.

That's true, I'm starting to realize the higher my rating is the more perfect I have to play. I can't waste any pointless moves

Who in their right mind would not want counterplay against 1.e4!! If you are playing for a draw you shouldn't be playing at all. But, if you must know the Pirc, Caro-Kann, and Modern come to mind. That is 1 . . d6, 1 . . c6, and 1 . . g6. But please, be a good chess player and play aggressively.

 I would have to disagree with you about the Pirc and Modern. In those openings black concedes space in order to create positional imbalances and play for a win, often by attacking white's large pawn center. This hardly seems to be the way to play for a draw, the petroff is much better for that. I have played the Pirc as both white and black, and I learned that it can often be played very aggressively for both sides (Austrian attack, for example).

I was just curious what people thought the best way to play for equality was, I'm not planning on playing like this myself.

yes the pirc and modern definitely concede too much space to be called equalizing.
