He is saying that, despite the fact that many beginners mistakenly think so, there is not a "best opening".
To answer your question more directly, they will choose one of the openings you mention (but there are tons of unmentioned strong possibilityes) depending on their style, depending on the opponent, depending on the goal (must win/must draw situation), depending on the time control, depending on their mood.
(by the way there are some mistakes in your list, the french is a defence to 1.e4, while the KIA and the Italian are white 1.e4 openings )

You can actually play 1... e6 (after 1. d4) inviting white to play french. White then has the possibility to take the invitation by playing 2. e4. In similar way you can play 1... c6 (after 1. d4) inviting white to play Caro-Kann.
Blueshade, i know that ;) but since he was asking how to counter 1.d4, i thought it was implicitely assumed that white stays in 1.d4 waters with 2.c4, and doesn't traspose to 1.e4 waters.

Fair enough, but I consider that the question was rather open.
Anyway, there is no answer to what very good players would play after 1. d4, except that they would play a sensible move. So any opening that can occur after 1. d4 could be the result.
Personally I often play either 1... c6 or 1... Nf6. I love both Caro-Kann, Benoni and Kings Indian and have played those openings many times after white's 1. d4. I also like 1... f5 (dutch). And sometimes I also choose 1... d5. If I have played one opening many times I need a break and play another one, sometimes I try out openings I am not used to play. It is my experience that the result of the game depends more on who is the strongest chess player and less on what opening I play. But I do feel comfortable in some types of positions that I am used to, so I will play more games with my favorite openings.
If a good player plays an important game I would think that he would go for a type of position where he feels at home. He might study his opponent's games and try to avoid his opponent's favorites.
what would the very good players play against the Queens openning.
Would ye play the Queens Decline, the Queens accept or some other opening like the Dutch, French,Intalian, Kings Indian defence or maybe the Kings Indian Attack etc.
