The easiest would be the Exchange Ruy Lopez. Basic concept of better pawn structure, good vs bad pawn majority. Understanding that Black needs to keep at least 1 piece on the board - pretty much all pawn endings win for White. Queen's often come off, so you learn how to coordinate pieces without the Queen- very important concept. Patience is a virtue here for White. Often Black will try to attack given that endgames favor White.

I've played the ruy lopez and have noticed that while white has to be more strategic, black can go on the attack pretty fast.

The Scotch is a good one. Very simple, solid, and easy to play. But I also recommend the Exchange Ruy.

ah yes my favorite e4 opening, the Queen Gambit
Not to be confused with the Queen’s Gambit, of course. The Queen Gambit is game-winning and decisive. The Queen’s Gambit, on the other hand, is garbage.
As you can see, in this cleverly planned sacrifice, white has successfully created isolated doubled pawns in black’s position, leaving the open black rook as a vulnerable target, as well as creating a long-term structural weakness. White’s pawn structure and development is utterly superior to that of the black side.

I admit it’s not that much from a general perspective but from that many moves in the game, it should be at least drawn- not to mention you then need to get compensation for your knight
