Black Mustang or Arctic Defense agains Nf3?

I am rated 700, not great. Um, why is everyone playing these defenses against my Nf3 open? Did COVID or the Vaxx cause this? I can see the Black Mustang I guess. The Arctic is just easy to beat. If you are going to play that, have some guts and follow through with the drunken knight. Maybe I missed a memo.
