Playing as white I play e4 and my opponent plays d5. What is a good move from here?

Take the pawn. The Scandinavian Defense is a well-known opening, but Bobby Fischer considered it unsound for Black and I too have my doubts. I think it should be taken seriously, but after exd5 ...Qxd5 then Nc3 to tempo the Queen: it feels like Black misplayed - even if the single tempi isn't of critical importance yet.

What next if the Black Queen checks the King.. I always end up exchanging Queens?

Why? Block on e2 with the Bishop, and if he follows up with Bg4 ("taking advantage" of the pin) just kick his Queen again with d2-d4.
